Cottage cheese and fruit wafers

  • 5 sheets of gelatin
  • 50 ml of water
  • 40 g of sugar
  • 150 g of cottage cheese
  • 250 g of Mango in syrup
  • Whipped cream
  • 8 grapes
  • Fresh mint

For the wafers:

  • 1/2 egg white
  • 30 g of icing sugar
  • 12 g of soft butter
  • 25 g of flour

Leave the gelatine to soak in cold water. Once soft, put them in a saucepan with 50 ml of water and the sugar. Heat it and stir it until everything dissolves and remove it from the heat. Mix in a bowl this mixture with the cottage cheese and the mango previously crushed and beat until it is homogeneous. Reserve the mixture in the refrigerator.

For the wafers, we will mix all the ingredients in a bowl until we obtain a dough. Fill a few molds and bake them about seven minutes at 180ºC until they are brown and remove them carefully. Pour a bit of cottage cheese and mango mixture into the bottom of the wafers, cover them with whipped cream and put some grapes and fresh mint leaves to decorate.
