Papaya mousse

  • 300 g of papaya in syrup
  • 125 g of Quark fresh cheese
  • 1 tablespoon of honey
  • 2 sheets of gelatin
  • 2 egg whites
  • 1 fresh mint branch
  • 50 g of red berries
  • Salt

Hydrate the gelatin with cold water and reserve it.

Crush the papaya and mix it with the Quark fresh cheese and the honey. Heat two tablespoons of the papaya puree. Drain the gelatin and dilute it in the hot puree. Add the rest of the papaya puree little by little, mixing everything with a whisk, whip the egg whites with a pinch of salt and mix them with the puree.

Distribute the mousse in glasses and leave them in the fridge for four hours until it settles. We will serve them with red berries and a few leaves of fresh cut mint.
