Pine nut flan

  • 4 eggs
  • Condensed milk
  • 100 g of sugar
  • 1/2 L of milk
  • Pine nuts
  • Vanilla

First of all we beat the eggs and mix them with the condensed milk. Reserve it. In a saucepan put to heat the half liter of milk with a branch of vanilla, without letting it boil so that the vanilla release all its essence. Stir for 10 minutes over very low heat and let it cool.

Once the milk is at room temperature, we can add it to the mixture of eggs and condensed milk. Add the sugar and pine nuts (whole or chopped, as desired). Pour the mixture into mini containers, previously caramelised and place them in a pressure cooker at maximum power for about 15 minutes. Once the time has elapsed and to make sure that the flan is cooked, we can stick a toothpick into the flan and if it comes out clean it means that the flan is finished and ready to eat.
