Chop the meat very finely with a knife and season it as desired, with a teaspoon of Dijon mustard, a few drops of Tabasco, a handful of chopped capers, a few grains of green pepper, chopped chive and chopped onion (preferably red). Mix well and check the seasoning. We can rectify with the desired ingredient. Add the yolk of the egg together with a pinch of white pepper and mix it again.
Let it settle for 10-15 minutes before serving so that the meat is well macerated. It is served cold.
