Brothy rice with razor clam

Ingredients
  • Razor clams in brine (4 can)
  • Rice (1/2 cup)
  • Garlic
  • Leek (1 piece)
  • Scallion (1/2)
  • Red pepper (1/2)
  • Crushed tomato (1 cup)
  • Saffron
  • White wine (1 glass)
  • Fish stock (0,5L)
  • Sea salt with lemon
  • Olive oil
Preparation

Recipe for 4 people.

In the paella pan, add some olive oil and proceed to chop all the vegetables in small pieces to make the sauce.

When everything is well poached, we pour the white wine and let the alcohol evaporate.

Next we add the rice, giving a couple of turns. Now let's pour the broth of fish, hot. Add the saffron, the garlic and the salt.

Let the rice cook for 25-30 minutes and then add the razors. We left cook everything together for a couple more minutes. Rest another five minutes and enjoy!
