Murcian style lobster rice

  • 1 lobster of 1,5 Kg
  • 400 g of rice
  • 2 medium onions
  • 1 ripe tomato
  • Olive oil
  • 3 garlic cloves
  • 1 red pepper
  • 1 glass of white wine
  • 1.5 l of seafood broth
  • Bay and paprika seasoning 
  • White pepper
  • Smoked salt

Put a paella pan to heat with olive oil and when it is hot, add the onion, the pepper and the garlic, very chopped, and brown them. Next add the peeled tomato and sauté it with the previous accompaniment.

When the onion, garlic and pepper has been mixed with the tomato, add the wine. Next we incorporate the lobster, which we have previously cut live in half, in the longitudinal direction.

Immediately add the rice and let it sauté for about five minutes in the company of the rest of the ingredients.

Finally, pour the seafood broth, season it with bay and paprika seasoning, a pinch of white pepper and salt. Let it cook for fifteen minutes, rectify salt and remove from heat, letting it rest for five more minutes. We will serve it very hot.
