- 4 grouper fillets
- 1 tablespoon of olive oil
- 3 onions
- 4 cloves of garlic
- 1 green pepper
- 2 carrots
- 1/2 teaspoon of ground chilli
- 2 cups of chopped tomato
- 1 tablespoon of ground cumin
- A pinch of cayenne pepper
In a hot pan with the oil over medium heat, add the onions sautéing and stirring frequently, for about 3 minutes. Add the garlic and cook for 1 minute more.
Add the pepper, the carrots and the ground chili and cook for 5 minutes over low heat. Finally add the tomato and leave it a couple of minutes more. Reserve the pepper and grind the rest of the ingredients to create a sauce.
Sprinkle the fillets with the cumin and pepper on both sides, and place them in the pan, cover it and cook over low heat for 10 to 15 minutes.
Place the steaks on top of the sauce on the plate and place the peppers that we have previously reserved as a decoration.
